Snack Idea: Quick Fix

Wasabi Peas!
How have I not heard of these until now?? They're so good, and a handful is a perfect little snack! They're Crunchy, hot, salty, and a bit sweet. If you can stand the hotness from the wasabi, try them!

Baked Eggplant Marinara

Do you love Eggplant Parmesan, but could do without the layer of breading and deep frying? Try this! It's just as delicious, but guilt free! :)

Ingredients:
1ripe medium-sized Eggplant
Olive Oil
Salt & Pepper
Your favorite Marinara sauce- home made is even better!
Low Moisture Part-Skim Mozzarella Cheese

Step 1
Wash the eggplant thoroughly and cut into 1/2 inch slices.
*You could choose to peel the skin, but I prefer the texture without peeling 
because it holds the eggplant together better.
















Step 2
Season the slices on both sides with a pinch of salt&pepper then drizzle with olive oil.
Coat your baking sheet with cooking spray, then strategically place the slices.
















Step 3
Bake in the 350 degree oven for 8-10 minutes, 
then flip and bake for an additional 5 on the opposite side.
(Until tender and golden brown)
















Step 4
While eggplant is baking, heat up the Marinara in a medium sauce pan on low heat.




















Step 5
Remove the eggplant from the oven and let cool. 
Place 3 slices of eggplant with a 1/4 cup of sauce onto a plate. 
Sprinkle the top with low moisture part-skim mozzarella.

















There you have it! So quick and easy!
